CHEF MICHAEL HUNG’S #SELECTLA GUIDE


Can you tell us about the concept for Viviane? What inspired the menu?

The menu is very much inspired by continental cuisine.

Describe one of your favorite dishes and/or ingredients on the menu.

One of my favorite dishes on the menu is our ribeye steak. I grill it and top it with bone marrow gremolata. As the gremolata cooks, it releases the flavors of toasted garlic, lemon, and parsley. The marrow melts, infuses with those flavors and drips over the meat. Toasted breadcrumbs absorb the infused marrow drippings and capture it all so nothing is lost and every bite is fully redolent of meat, marrow, and aromatics.

What are your favorite meals and/or restaurants in LA?

I just moved to West LA and have really loved exploring Sawtelle. One place that I recently discovered is Sushi Tsujita. They have an amazing omakase menu, and while it is in the higher price range it is well worth it.

What is your favorite place to grab a drink in LA?

With the restaurant opening I have had little time to grab a drink, but I will tell you I am excited to visit Esters Wine Bar in Santa Monica.

Can you tell us a little about the LA food scene? What has changed since you moved here from SF?

The LA scene is really starting to blossom. The number of high profile restaurants opening this fall is astounding, and these are all restaurants being helmed by classically trained chefs. And what is great is the cultural acceptance of food culture that is so rapidly occurring in the city. The expectation of the public is increasing, which is great because it pushes us as chefs to use better ingredients and present a better product.

Are there any things you love to do in LA when you have time for a night out?

Honestly, it is hard for me to get out for a night on the town. These days, I try and save up my energy and days off to explore all the great things about Southern California; overnight trips to Catalina Island, riding a motorcycle through Malibu, and of course dining out.
