Chef Susur Lee’s Almond Crusted Baked Apple Pie
6 large Mutsu apples, peeled
½ lemon, juiced
½ lemon, zest
>1 cup sugar (slightly less than a cup)
1 tablespoon ground cinnamon
1 cup white sugar
½ cup + 1 tbsp butter
4 eggs
1 ½  cups almond flour
1 tsp vanilla extract
2 tbsp rum or brandy (optionall)
1 tsp flour
Créme fraiche or sour cream (optional)
Bottle of whipping cream (optional)
Icing sugar (dust on top)
INSTRUCTIONS
Grate apple into mixing bowl
Add lemon juice, zest, cinnamon, and sugar and let sit for 15 mins
Drain the juice
Butter the roasting pan
Pack the apple into the roasting pan
Mix/whisk together all the ingredients until there are no lumps: eggs, flour, room temperature butter, sugar, vanilla
Chill in the fridge for 15 mins
Spead the almond cream over apples, ½ inch thick
Put in over 370 F, for 45 minutes
