Susur Lee’s Friendsgiving Squash Recipe

  • 2 tbsp honey
  • 8 pieces of sliced butternut squash with skin removed
  • 1.5 cups of water
  • 4 tablespoons dry cranberries
  • 1 tablespoon of butter
  • 1 cinnamon stick
  • Pinch of salt
  • ½ a lemon
  • 2 small slices of ginger
  1. Slice squash and remove the skin, add to pan
  2. Add honey, cranberries, and ginger
  3. Add enough water to cover the squash
  4. Add lemon juice, salt, butter, and cinnamon stick
  5. Bring to a boil
  6. Lower to a simmer for 15 minutes and then flip and squash for another 15 minutes
  7. Poke with a fork, and when soft they’re done
  8. Plate squash 
  9. Add reduced sauce over top of squash to finish
