If you haven’t already been to Koi Fusion, you’re missing out. This mexican-korean-fusion food cart chain has become one of the most popular cuisines in Portland. With several cart spots now open around the city, and a roaming food truck at major events, these creative dishes have taken the city by storm and made most of ask, “why hasn’t this been done before?”

As a kid, creator, Bo Kwon would make infused foods & creative concoctions. Later on he was influenced by Kogi’s BBQ Truck in LA, and seeing how the Portland food cart scene was on its way to being big, he was inspired to start his own venture. Bo Kwon’s own favorite dish is the Bulgogi burrito with kimchi, but he’s been thrilled to see how his customers have helped in the shaping of the menu too. Some regulars love the cheesesteak wrapped in a burrito shell, that they’ve come to name the Philly Blunt, and now feature it as an honored secret menu item.

With big plans for expansion, Koi plans to open 2 locations a year and soon start to expand outside of the PDX area.  You can try them out on UberEats or visit them across several locations throughout Portland.
