Cart Lab is a very new indoor food cart hall located in the south waterfront. They have five different food carts, a bar, and a large dining hall with an outdoor patio.  New to the UberEats platform, we got to learn a bit more when talking to Doug Williams. The concept came together when Koi Fusion’s Bo Kwon and Mike Senzaki wanted to bring the best food carts in portland together while working with friends. The Idea was to give portland a cool hangout spot where everyone can come and enjoy themselves.

They’ve already been building some amazing memories as they were one of the few spots open during the recent snow-pocalypse, and were thrilled when the entire neighborhood came, hung out, and enjoyed all the food and drinks.  Although there’s so many amazing things to try, Williams says that he likely eats the Gelatto Maestro at least 3 times a week.

Cart Lab hopes to become a “Go To” spot in portland while keeping their Portland roots. They want it to be a spot where any family and all friends can come and feel comfortable and welcome.  They’re located off of SW River Dr, just minutes from downtown.
