Speaking to the highly effervescent character that is Minh Chu there is always a laugh or a smile. With his charisma and passion for food, it is easy to see how he left such a profound legacy on Victoria Street with his restaurant Binh Minh.

Having since sold his restaurant, Minh launched his next project, Mister Minh, a partnership with UberEATS in July.

A bubbly character, a large part of the dining experience offered when he opened in 1997 was his hands on approach and passion that was evident in the food and customer service.

Over the years Minh’s personality and authentic food brought many loyal patrons, which was something very difficult to give up.

“Running a full on restaurant for so long takes its toll. Im a very involved guy…kisses and hugs for customers and friends, (he laughs) that’s just me. So to step away from that, emotionally, was a difficult decision.” Minh said.MisterMinh_ubereats_food

His new project, Mister Minh, a commercial sized kitchen purposely built with delivery and UberEATS in mind, is a testament to the new landscape of food and dining.

“It’s good now because I get to do things differently, I get to combine with technology and give myself a bit more time for my family and kids.” Minh said.

Back in 1997 when Minh opened Binh Minh, he never envisaged the take-away industry to take this form. Now catering entirely to delivery he recognises the challenges, one of which is being able to portray his personality into food which travels.

“Our dishes will be selective, we want them to enjoy the experience and capture the imagination like we would when we had an in-house experience.”

One of the ways he plans to capture people’s imagination is by bringing talented chefs in to curate and frequently alter the menu giving UberEATS users variety and choice.

Minh believes that kitchens like his, ones built purposely for delivery are the way of the future. He is excited by both the potential and the fact that he’ll once again be serving up food inspired by his biggest inspiration, his Mum.
